Recipe no. 3

Today i am using a recipe found here at Waitrose. This one has been in the cupboard a little while and i know I've used it several times. They are currently cooking in the oven and cooling on the rack :)

Ingredients

125g butter, softened
100g light brown soft sugar
125g caster sugar
1 egg, lightly beaten
1 tsp vanilla extract
225g self-raising flour
½ tsp salt
200g chocolate chips

Method

  1. Preheat the oven to 180°C, gas mark 4.
  2. Cream together the butter and sugars until pale and fluffy. Slowly add the egg and vanilla, beating between each addition. Sift in the flour and salt and mix. Mix in the chocolate chips.
  3. Roll the mix into balls the size of hazelnuts. Put on baking sheets lined with baking parchment (bake in batches). Bake for 10-12 minutes, until just golden. Cool on a rack and serve.

I have to say after making the Flapjack cookies at the beginning of the week they take some beating!

First impressions

They look great,
They taste great, these are crunchy cookies as apposed to chewy but very moorish.
This recipe made enough to fill a plastic biscuit box
So i would give this recipe a 7/10
